One base recipe

Any curry, in nine small steps.

A generic curry recipe I developed while studying for my MS in the USA. Swap in any vegetable you have, or make three small changes for chicken, mutton, fish or prawns.

The recipe

Tap a step when it's done. The 4-minute steps have timers.

  1. 1Cut onions and chillies.
  2. 2Fry in some oil for around 4 minutes on medium-high heat. NON-VEG AAdd ginger garlic paste now.
  3. 3Cut the vegetable(s) of your choice. NON-VEGUse chicken or mutton pieces, fish or prawns instead.
  4. 4Add them and fry for around 4 minutes on medium-high heat.
  5. 5Add red chilli powder and turmeric. NON-VEG BAdd cloves, cardamom (elaichi) and cinnamon (dalchini). NON-VEG COptional: add garam masala powder, or your choice of store masala.
  6. 6Keep frying until just before they start browning.
  7. 7Add some water.
  8. 8Add salt.
  9. 9Boil until the gravy is as thick as you like.
Curry is ready.

For meat and seafood, make sure it's cooked through before serving: chicken until no pink remains inside, while mutton needs a lot longer at step 9 (a pressure cooker helps). Fish and prawns cook fast, so add them gently and don't over-boil.
