Chia pudding

Chia seeds soaked overnight in milk until they thicken into a pudding. A no-cook breakfast you make the night before.

Chia pudding

Serves 2Prep 5 min

Ingredients

  • ¼ cup (40 g) chia seeds
  • 1 cup (240 ml) milk or plant milk
  • 1 to 2 tsp honey or maple syrup
  • ¼ tsp vanilla extract (optional)
  • Fruit, nuts or granola to top

Method

  1. Whisk the chia seeds, milk, honey and vanilla in a bowl or jar.
  2. Leave 5 minutes, then whisk again to break up any clumps.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. Stir, divide into glasses and top with fruit and nuts.
Tip: For a thicker pudding use 3 tbsp chia per ½ cup milk; for a thinner one add a splash more milk in the morning.

Cups and spoons are US measures (1 cup = 240 ml); weights and °C are given alongside. Cook meat to a safe inside temperature.

Food marks, as on packaged food in India: vegetarian · non-vegetarian (meat, fish or egg; Indian rules count egg as non-vegetarian). Recipes with both marks can be made either way.
