Ingredients
1 cup (340 g) honey
1 to 2 tbsp red chilli flakes (or 2 fresh red chillies, sliced)
1 tsp apple cider vinegar or white vinegar
A pinch of salt
Method
Put the honey and chilli flakes in a small pan over low heat.
Warm gently for 4 to 5 minutes until it starts to bubble at the edges. Do not let it boil hard.
Take it off the heat and stir in the vinegar and salt.
Leave to infuse for 30 minutes. Strain out the chillies if you want it smooth, or leave them in for more heat.
Store in a clean jar at room temperature for up to a month.
Tip: Taste after 10 minutes of infusing: the longer it sits, the hotter it gets.
