Makes about 10Prep 5 minCook 15 min
Ingredients
1½ cups (190 g) all-purpose flour
2 tbsp sugar
2 tsp baking powder
½ tsp salt
1¼ cups (300 ml) milk
1 egg
3 tbsp melted butter, plus more for the pan
1 tsp vanilla extract
Method
Whisk the flour, sugar, baking powder and salt in a bowl.
In another bowl whisk the milk, egg, melted butter and vanilla.
Pour the wet into the dry and stir just until combined; a few lumps are fine.
Heat a lightly buttered pan over medium heat. Pour ¼ cup of batter for each pancake.
Cook until bubbles appear and the edges look set, about 2 minutes, then flip and cook 1 minute more.
Serve with butter and maple syrup or fruit.
Tip: Let the batter rest 5 minutes: the pancakes rise higher.
Cups and spoons are US measures (1 cup = 240 ml); weights and °C are given alongside. Cook meat to a safe inside temperature.
