Ingredients
3 very ripe bananas
⅓ cup (75 g) melted butter
¾ cup (150 g) sugar (white or brown)
1 egg
1 tsp vanilla extract
1 tsp baking soda
A pinch of salt
1½ cups (190 g) all-purpose flour
½ cup (60 g) chopped walnuts or chocolate chips (optional)
Method
Heat the oven to 350°F (175°C) and grease a 9 x 5 inch (23 x 13 cm) loaf pan.
Mash the bananas in a bowl, then stir in the melted butter.
Mix in the sugar, egg and vanilla, then the baking soda and salt.
Fold in the flour until just combined, then the nuts or chocolate.
Pour into the pan and bake 55 to 65 minutes, until a skewer comes out clean.
Cool 10 minutes in the pan, then turn out onto a rack.
Tip: Do not overmix after adding the flour, or the loaf turns dense.
