The quickest way to use bean sprouts: a hot stir-fry with garlic, spring onion and soy sauce. (Korean sukju namul, a seasoned side dish, is the other favourite.)
Serves 2 to 3Prep 5 minCook 5 min
Ingredients
12 oz (350 g) mung bean sprouts, rinsed and drained well
1 tbsp oil
2 cloves garlic, sliced
2 spring onions, cut in 2-inch pieces
1 tbsp soy sauce
1 tsp oyster sauce (optional)
1 tsp sesame oil
A pinch of sugar and white pepper
Method
Heat a wok or large pan over high heat until very hot, then add the oil.
Add the garlic and the white parts of the spring onions and stir for 20 seconds.
Add the bean sprouts and toss for 1 to 2 minutes, just until they wilt but still crunch.
Add the soy sauce, oyster sauce, sugar and pepper and toss again.
Turn off the heat, stir in the sesame oil and green spring onion and serve at once.
Tip: For sukju namul, blanch the sprouts 2 minutes, drain and toss with sesame oil, garlic, salt and sesame seeds.
