Ingredients
1½ cups (190 g) all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1½ tsp ground cinnamon
2 eggs
½ cup (120 ml) vegetable oil
¾ cup (150 g) sugar (or half brown sugar)
1 tsp vanilla extract
1½ cups (200 g) grated zucchini, lightly squeezed
½ cup (60 g) chopped walnuts (optional)
Method
Heat the oven to 350°F (175°C). Grease and line a 9 x 5 inch (23 x 13 cm) loaf pan.
Mix the flour, baking soda, baking powder, salt and cinnamon in a bowl.
In another bowl whisk the eggs, oil, sugar and vanilla, then stir in the zucchini.
Fold the dry ingredients into the wet ones until just combined, then add the walnuts.
Pour into the pan and bake 50 to 60 minutes, until a skewer comes out clean.
Cool in the pan for 10 minutes, then on a rack before slicing.
Tip: Squeeze the grated zucchini gently in a towel; too much water makes the loaf gummy.
Cups and spoons are US measures (1 cup = 240 ml); weights and °C are given alongside. Cook meat to a safe inside temperature.
