Ingredients

  • 4 large bell peppers
  • 1 tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 lb (450 g) ground beef or turkey (or 1 can beans for vegetarian)
  • 1 cup (185 g) cooked rice
  • 1 can (14 oz / 400 g) diced tomatoes
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper
  • 1 cup (100 g) shredded cheese

Method

  1. Heat the oven to 375°F (190°C). Cut the tops off the peppers and remove the seeds. Stand them in a baking dish.
  2. Fry the onion in the oil for 5 minutes, add the garlic, then the meat, and cook until browned.
  3. Stir in the rice, half the tomatoes, paprika, oregano, salt and pepper.
  4. Fill the peppers, pour the rest of the tomatoes around them and add ¼ cup (60 ml) water to the dish.
  5. Cover with foil and bake 30 minutes. Uncover, top with cheese and bake 10 minutes more.
Tip: Use red, yellow or orange peppers: they are sweeter than green.

Cups and spoons are US measures (1 cup = 240 ml); weights and °C are given alongside. Cook meat to a safe inside temperature.
