Ingredients
½ cup (115 g) butter
6 oz (170 g) dark chocolate, chopped
1 cup (200 g) sugar
2 eggs
1 tsp vanilla extract
½ cup (65 g) all-purpose flour
¼ cup (25 g) cocoa powder
¼ tsp salt
Method
Heat the oven to 350°F (175°C) and line an 8-inch (20 cm) square pan with parchment.
Melt the butter and chocolate together over low heat, then cool a little.
Whisk in the sugar, then the eggs one at a time and the vanilla, whisking hard for a minute (this gives the shiny top).
Fold in the flour, cocoa and salt.
Pour into the pan and bake 22 to 27 minutes, until the top is set and a skewer comes out with moist crumbs.
Cool completely before cutting.
Tip: Take them out a little early: brownies firm up as they cool.
