2 tbsp oil
2 onions, finely chopped
2 green chillies, slit
1 tbsp ginger-garlic paste
2 tomatoes, chopped
1 tsp red chilli powder

1 tsp garam masala

Method
Heat the oil in a heavy pan. Fry the onions and green chillies for 10 minutes until golden.
Add the ginger-garlic paste and stir for 1 minute.
Add the tomatoes, chilli powder, turmeric and ground coriander and cook until the tomatoes break down and oil separates, 5 to 7 minutes.
Add the chicken and stir to coat for 3 to 4 minutes.
Add the water and salt, cover and simmer 20 minutes until the chicken is cooked through (165°F / 74°C).
Stir in the garam masala and coriander. Serve with rice or chapati.
