Ingredients
12 oz (340 g) linguine or spaghetti
1 lb (450 g) large shrimp (prawns), peeled and deveined
2 tbsp olive oil
4 tbsp butter
5 cloves garlic, sliced
½ tsp red chilli flakes
½ cup (120 ml) dry white wine or chicken stock
1 lemon, zest and juice
¼ cup chopped parsley
Salt and pepper
Method
Cook the pasta in salted water until al dente; save ½ cup of the water.
Season the shrimp with salt and pepper. Heat the oil and 1 tbsp butter in a large pan and cook the shrimp 1 to 2 minutes a side until pink. Set aside.
Add the remaining butter, garlic and chilli flakes and cook 1 minute without browning.
Pour in the wine and simmer 2 minutes to reduce by half.
Add the pasta, shrimp, lemon zest and juice and a splash of pasta water and toss.
Finish with parsley and serve.
Tip: Shrimp overcook quickly: take them out as soon as they curl into a "C".
