Serves 4Prep 10 minCook 20 min
Ingredients
12 oz (340 g) short pasta
1 cup (250 g) thick yogurt
1 clove garlic, grated
1 tbsp oil
1 onion, finely chopped
1 lb (450 g) ground beef or lamb
1 tbsp tomato paste
1 tsp paprika
½ tsp cumin
Salt
Chilli butter: 3 tbsp butter, 1 tsp Aleppo pepper or chilli flakes, 1 tsp dried mint
Fresh parsley or dill
Method
Mix the yogurt with the garlic and a pinch of salt and leave at room temperature.
Fry the onion in the oil for 5 minutes, add the meat and brown it. Stir in the tomato paste, paprika, cumin and salt for 2 minutes.
Cook the pasta and drain.
Melt the butter until foaming, then stir in the chilli flakes and mint.
Spread yogurt on plates, top with pasta and meat, and spoon over the chilli butter. Finish with herbs.
Tip: Have the yogurt at room temperature so it does not cool the pasta.
Cups and spoons are US measures (1 cup = 240 ml); weights and °C are given alongside. Cook meat to a safe inside temperature.
